This Blueberry Banana Cornbread is my spring country loaf and I see it as more banana bread than cornbread. But when it’s warmed up, it’s more cornbread to me and I want butter and honey on it. This loaf is so fluffy, dense, and grainy from the cornmeal that makes it hearty! Love my creation and the first cut into the loaf picture.

If Elsa Dutton in 1883 learned to bake for her first love Ennis, I imagine it would be something close to this loaf. Blueberry cornbread is country and banana and honey because she was free-spirited and yellow like her horse Lightning.

Blueberry Banana Cornbread

Ingredients

  • 3 ripe medium bananas, mashed
  • 2 eggs
  • 3/4 cup brown sugar
  • 1/2 cup butter, melted
  • 1 tsp vanilla extract
  • 100 g yogurt, plain or vanilla
  • 1 Tbsp honey
  • pinch of salt
  • 1 tsp ground cinnamon
  • 1 tsp baking soda
  • 1 1/2 cup flour
  • 1 cup cornmeal
  • 1 cup frozen blueberries

Instructions

  • In a large mixing bowl, on medium speed, mash bananas until there are no large lumps. Mix in brown sugar until blended. Add egg, mix until blended.
  • Add butter, vanilla extract, yogurt, and honey, continue to mix until blended.
  • Add pinch of salt, ground cinnamon, baking soda, and flour, mix until combined. Add cornmeal, mix until fully combined.
  • In a small bowl, with 1 Tbsp of flour, toss blueberries until they are lightly coated. This will prevent them from sinking to the bottom of the loaf when it is baking. Gently scoop blueberries out of small bowl into the batter with excess flour left in the bowl. Gently fold the blueberries into the batter.
  • In a loaf pan lightly greased with butter, pour batter into the pan evenly.
  • Bake at 350 F for approximately 50-60 minutes until toothpick insert comes out slightly damp but not runny in the middle of the loaf. Cool completely or overnight before slicing.
