Irish Cream Chocolate Cake with vanilla frosting and romantic roses designs is made with Carolans Irish Cream. It is as lovely as it is tasty.
Irish Cream Chocolate Cake is a rich chocolate cake that is moist and dense. The Irish cream comes through well and adds to the chocolate flavour. It gets tricky when baking with liquor and cocoa powder. Sometimes one of the two ingredients will outshine the other. You will either taste only chocolate or there is too much liquor that there is no chocolate anymore. I think this recipe works well as it has that balance between the two. The only thing I cannot help with is detailing how I decorated this cake! You’re on your own but I’m sure you will have fun and be as creative!
I often write about what inspired me to create certain recipes. For this cake, I wanted to replicate one of the cakes from the Beauty and the Beast movie’s ‘Be Our Guest’ scene. My cake did not turn out like the cake from the movie since I had let my own creativity take charge. I created this modern romantic roses cake instead! Being creative to me means to let your ideas run freely as you do something. That’s when it’s the most fun and authentic. I hope you have just as much fun as I did!
Irish cream Chocolate Cake with Vanilla Frosting
Ingredients
- 2 cups sugar
- 1/2 cup unsalted butter softened
- 1/2 cup vegetable oil
- 2 eggs
- 3/4 cup milk
- 1/2 cup Irish cream
- 1 tsp vanilla extract
- 1/2 cup water
- 2 cups flour
- 3/4 cup cocoa powder
- 2 tsp baking soda
- 1 tsp salt
Vanilla Frosting
- 5 cups icing sugar sifted
- 1/2 cup unsalted butter softened
- 2 Tbsp milk
- 1 tsp vanilla extract
Instructions
Cake
- In a large mixing bowl, mix butter and sugar until smooth. Add eggs and oil. Mix until smooth.
- Add vanilla extract, Irish cream, milk, and water, mix until blended.
- Add dry ingredients, mix until smooth.
- In two 8 inch cake pans lined with parchment paper at the bottom, pour cake batter evenly.
- Bake at 300 F for 30-40 minutes until insert in the centre of the cake comes out clean. One cake might take slightly shorter or longer than the other.
- Cool completely for 2-3 hours before icing.
Vanilla Frosting
- In a medium mixing bowl, mix all ingredients until fully blended and forming stiff peaks.
