Reese's Peanut Butter Cups Pumpkin Loaf

Reese’s Peanut Butter Cups Pumpkin Loaf is like no other pumpkin loaf. It is ultra moist, dense, and fluffy at the same time. The peanut butter cups sneak up in each bite with hints of chocolate and grainy peanut butter. It is such a cozy treat with your favourite coffee. If you are like me and love pumpkin spice, you can have it with a pumpkin spice latte. That’s how I love it and how much I love it!

Let’s talk method now. Tossing the peanut butter cup pieces in flour will create a light coating. This creates friction against the pumpkin batter so the pieces stay in place in the batter and will not sink to the bottom of the batter as much while baking.

Reese’s Peanut Butter Cups Pumpkin Loaf

Ingredients

  • 1 cup flour
  • 1 cup sugar
  • 1 egg
  • 1/3 cup unsalted butter softened
  • 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup pumpkin puree
  • 6 Reese's peanut butter regular size cups roughly chopped

Instructions

  • In a large mixing bowl, using an electric mixer, beat butter and sugar until fluffy, add egg and beat until combined and light and fluffy. Mix in the pumpkin puree and vanilla extract.
  • Add flour and all dry ingredients. Mix on low speed until combined.
  • In a small bowl, toss roughly chopped peanut butter cup pieces in 1 Tbsp of flour until lightly coated. When the pieces have a flour coat, they won't all sink to the bottom of the batter while baking.
  • Save approx. 1/3 of the peanut butter cup pieces for topping the loaf before baking. Fold 2/3 of the pieces into the pumpkin batter.
  • Pour pumpkin batter into a greased loaf pan and place the saved Reese's pieces on top of the loaf however you think looks appealing. They will move a bit during baking, fyi.
  • Bake at 350 F for 60-70 mins until fully baked through – toothpick comes out clean from the middle of the loaf. Cool completely before slicing. Enjoy!!
