Butter Tart Squares are my other weakness other than butter tarts. These squares are perfectly flaky on the bottom like a pie-shortbread crust and I love the butter tart filling that gets crusty on the top. If it sparkles in the light, you know there’s enough sugar!

Butter Tart Squares

These squares are what I love morning, afternoon, and night during the holiday season. I do bake these throughout the year but I like them the most during Christmas. It all started with loving butter tarts. These squares have a base that is a lot like a pie-shortbread crust, so I think they are a step up as it incorporates that butter tart’s pie shell texture.

I baked this in a Le Creuset pink casserole dish last year as pictured. It works just as well in a 9×9 inch pan as per the recipe. It is one of the most simple recipes that delivers good results each time I bake them. Hope you enjoy these squares as much as I do.

Butter Tart Squares

Prep Time 25 minutes
Cook Time 30 minutes
Servings 1 pan

Ingredients

Base

  • 1/2 cup butter softened
  • 1/3 cup brown sugar
  • 1 1/4 cup flour

Filling

  • 2 eggs
  • 1 cup brown sugar
  • 1/4 cup flour
  • 1 tsp baking powder
  • 1 1/2 cup raisins soaked in hot water for a few minutes to soften, squeeze water out after

Instructions

  • In a medium mixing bowl, mix ingredients for the base in a blender until crumbly.
  • Press into a 9×9 inch pan, greased
  • Bake at 350 F for 10 minutes, set aside to cool slightly.
  • In a large mixing bowl, mix together ingredients for the filling and pour over slightly cooled base.
  • Bake at 350 F for 25-30 minutes. Cool completely before slicing and serving.

Another holiday favourite of mine is the Cranberry Crumble Coffee Cake. This coffee cake is dense, buttery, and fruity. It goes so well with holiday coffees and teas.
