Apple Pie with Almond Paste Filling

Apple Pie with Almond Paste Filling uses almond flour, almond extract, and 2 large apples. The rustic rose design was my free-style creation and vision for this pie. You will be making your own pie crust using this recipe. This is the only time consuming part of this recipe. The rose design does not require a lot of time as you would place the pieces working your way from the outside of the pie pan to the centre.

Ingredients

Pie Crust

  • 1 1/2 cup flour
  • 1/2 cup butter cubed
  • 2 Tbsp sugar
  • 1/4 tsp salt
  • 3 Tbsp ice cold water

Almond Paste

  • 1 cup almond flour
  • 1/2 cup powdered sugar
  • 1 egg white
  • 1/4 tsp almond extract
  • 1/8 tsp salt

Instructions

Pie Crust

  • In a large mixing bowl, mix flour and butter until coarse crumbs are formed. I used my hands for this process but you can use a pastry cutter.
  • Add sugar, salt, mix into coarse crumb mixture. Don't over mix as you'd want butter pieces/crumbs so crust will be baked flaky.
  • Add cold water and mix to form dough.
  • Split dough into two round, slightly flattened disks and freeze them while making pie filling.

Almond Paste

  • In a medium mixing bowl, mix all ingredients until fully blended.

Rose Design

  • Cut two large apples into thin slices, slightly angled.
  • Place slices starting from the edge of the crust using larger apple slices and working towards the centre of the pie.
  • Brush apple slices with 1 Tbsp of melted butter and sprinkle 1/4 tsp cinnamon mixed with 2 Tbsp sugar.
  • Bake at 400 F for 40-50 F. Serve warm.

One slice of this pie with a scoop of vanilla ice cream makes for the perfect dessert. I love to bake pies and I always make my own pie crust. Chilling of the pie dough before rolling them out to make the pie shell is so important. If making pie crust is not a task you want to try, you can still try making this pie using pre-made pie crust. It will still be as lovely and tasty!
