Creamy Avocado Corn Salad has cilantro, avocado, green bell pepper, corn, lime, and bacon. It is so good that it really only needs one picture to get your attention. It has all the ingredients to make a refreshing summer salad. You can use parsley instead of cilantro, but there is something delicious when cilantro is used with avocado. Maybe it’s a familiar flavour from a few Mexican dishes that use cilantro, avocado, and lime. The lime juice is what adds the tangy kick in this creamy sour cream coated salad.

Creamy Avocado Corn Salad

Cook Time 10 minutes
Servings 4 people

Ingredients

  • 1 avocado diced
  • 350 ml niblets corn 1 can
  • 1/4 cup sour cream add more if preferred
  • 2 Tbsp green onion chopped
  • 1/4 cup cilantro chopped
  • 1/2 green pepper diced
  • 2 bacon strips chopped
  • salt and pepper to season
  • 1 Tbsp lime juice approx. half a lime

Instructions

  • In a large bowl, mix all ingredients.
  • Serve right away or after chilling in the fridge for 10 minutes so all ingredients are cooled down.

Notes

You can do parsley instead of cilantro but I think cilantro works so well in this salad and bacon always takes things to a new level.
