Loaded Oreo Chocolate Chip Cookies are soft on the inside with gooey chocolate chips and semi-softened Oreo cookies.
I have imagined baking cookies with Oreos in them and here they are with full of chocolate chips too!
There has been a lot of beautiful Instagram feed where bakeries are showing off their gorgeously yummy cookies, for example, Purebread in Vancouver and Levain in the US. The images almost always include one where the cookies are held in a hand and broken in half so you can see the inside of the cookie. (See my last picture! 🙂 The inside of the cookies are always packed with chocolate chips and other goodies. For mine, I decided my Loaded Oreo Chocolate Chip cookies had to include Oreos as a “goodie”.
Besides checking out bakeries both locally and globally as baking inspiration, I also watch some baking shows. One of the baking shows showed when beating butter and sugar, it is key to beat it so it is airy to bring a certain texture to the cookies even after going into the oven. This recipe incorporates this key step! I find that the cookies are less likely to flatten during the cooling process so that you have a cookie with a beautiful form!

- In a large mixing bowl or stand mixer bowl, beat butter and sugar for 2 minutes until slightly airy. Add eggs and vanilla and mix on low until fully blended.

- Dough will be stiff at this point. On low speed, mix in the chocolate chips for a few intervals only. Add Oreo pieces. Mix a few intervals only.
- Place 1/3 cup sized dough balls onto baking sheets. I did 6 per sheet, two -three sheets.
- Bake at 375 F for 8-10 minutes until the first sight of brown on top of the cookies. Remove and cool for 5 minutes before transferring onto cooling racks. Enjoy!!!
