These Ube cinnamon buns are dense and chewy, the filling has a fine balance of the Ube and cinnamon flavour, and the Ube cream cheese frosting is now a fav frosting creation of mine.
I spotted Ube Halaya in a small grocery store I was exploring after a brunch date with a girlfriend. Instead of an Ube cake, I decided to bake Ube cinnamon buns. Ube Halaya has the consistency of strawberry jam. It’s very sticky and sweet, but not too much to make these buns too sweet. Every part of this bun has Ube in it – the bun, the filling, and the frosting.
Ube Cinnamon Buns with Ube Cream Cheese Frosting
Ingredients
Ube Cinnamon Buns
- 3/4 cup milk, warmed up 45 seconds in the microwave
- 1/4 cup sugar
- 8 grams active dry yeast (1/4 oz packet)
- 1/4 cup butter, softened
- 1 egg room temperature
- 3/4 cup Ube Halaya
- 1/8 tsp salt
- 3 1/4 cup flour
Filling
- 1/4 cup Ube Halaya
- 2/3 cup brown sugar
- 1 Tbsp ground cinnamon
Ube Cream Cheese Frosting
- 1/4 cup cream cheese, softened
- 1/4 cup butter, softened
- 1/4 cup Ube Halaya
- 2 drops red food colouring
- 2 drops blue food colouring
- 1 cup icing sugar
Instructions
Ube Cinnamon Buns
- In a mixing bowl, add heated milk, sugar, and sprinkle active dry yeast over. Add butter, egg, and Ube Halaya. Mix until blended.
- Add salt and flour, mix until fully combined and dough is forming together and becoming stiff.
- Attach the dough hook, and kneed the dough on low speed for 9 minutes. Reposition the dough if needed. Dough should be slightly sticky, but if it's sticking to your hand, add more flour. (Kneed by hand instead of using a dough hook on a mixer, place dough on a floured surface and kneed for 9 minutes).
- Place dough in a large bowl, cover with plastic wrap or a warm towel. Let it rise for 1 hour or until it has doubled in size.
- Punch out the air in the dough and roll dough out on a floured surface into 16"x12" by 1/2" in thickness, spread filling evenly. Roll up the dough and cut off the ends about 1/2" that does not have enough filling. Cut into 12 pieces.
- In a large rectangular pan, lined with parchment paper and lightly greased with butter, place 12 pieces into the pan. Set aside and let rise for 1 hour.
- Bake at 350 F for 18-20 minutes until edges are starting to brown. Cool down before icing.
Filling
- In a small bowl, combine all ingredients.
Ube Cream Cheese Frosting
- In a mixing bowl, use an electric mixer to cream all ingredients until smooth and glossy. Can heat up slightly in a microwave before use. It will be more runny and glossy to be poured over cinnamon buns or any baked goods.
