Chewy Oat Fudge Bars

Ingredients

  • 1/2 cup butter melted
  • 3/4 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/4 cup flour
  • 1/4 tsp ground cinnamon
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 2/3 cup oatmeal, quick rising
  • pinch of salt

Fudge

  • 1 cup semi sweet chocolate chips
  • 1 cup condensed milk
  • 2 Tbsp butter

Instructions

  • In a large mixing bowl, mix butter, sugar, egg, vanilla for 5 minutes.
  • Add dry ingredients with oatmeal going in last, mix until fully blended.
  • Spread 3/4 of the oatmeal batter into a 9x9 square pan, greased or lined with parchment paper.

Fudge

  • In a glass bowl or steel mixing bowl, add all ingredients and heat over a double boiler and mix until smooth.
  • Preheat oven to 350 F and bake the square pan of oatmeal for 5 minutes to give the oatmeal base a head start so it can be fully baked and extra chewy.
  • Pour fudge over the oatmeal base.
  • Place flattened pieces of the remaining 1/4 oatmeal batter over the fudge.
  • Bake for 20-30 minutes until the oatmeal pieces on top are just starting to brown. Do not over-bake to avoid a crunchy oatmeal texture instead of chewy.
  • Cool completely or overnight before slicing into squares.
