In a glass bowl or steel mixing bowl, add all ingredients and heat over a double boiler and mix until smooth.
Preheat oven to 350 F and bake the square pan of oatmeal for 5 minutes to give the oatmeal base a head start so it can be fully baked and extra chewy.
Pour fudge over the oatmeal base.
Place flattened pieces of the remaining 1/4 oatmeal batter over the fudge.
Bake for 20-30 minutes until the oatmeal pieces on top are just starting to brown. Do not over-bake to avoid a crunchy oatmeal texture instead of chewy.
Cool completely or overnight before slicing into squares.
