Ingredients
2-3
oxtail pieces
approx. 3 inch in thickness
1
tsp
olive oil
1
celery stick
cut into large chunks
1
medium onion
chopped
1
carrot
cut into large chunks
3
cups
water
add more to cover all ingredients if needed
salt and pepper to season
Instructions
In a large sauce pan (with lid), sauté oxtail pieces on medium heat with a small tsp of olive oil to slightly brown to bring out the flavour and keep meat tender when stewing.
Add water and other ingredients. Season with salt and pepper. Cover and cook on low-medium heat for 1-2 hours.
