The first energy ball came from the West where cowboys would take these cookies on long days out. Standard cowboy cookies have chocolate chips and chopped pecans. What make these Modern Cowboy Cookies with an elevated, modern flare are the butterscotch chips, dark chocolate chunks, and toasted chopped pecans. These ingredients go so well together and bring out the best flavours for a treat that fuels any kind of day ahead.

There is also quick oats and sweetened shredded coconut in the cookies. These two ingredients make the cookies ultra chewy and are good sources of energy. These cookies are chewy in the centre and crunchy from the toasted pecans and pieces of chocolate chunks and butterscotch chips. If you reheat it in the microwave, the chocolate chunk and butterscotch chips get a bit melted and gooey.

Ingredients

  • 3/4 cup salted butter softened
  • 3/4 cup brown sugar
  • 1/2 cup sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 1/2 cups flour
  • 1 cup butterscotch chips
  • 1 cup dark chocolate chunks
  • 1/2 cup sweetened shredded coconut
  • 2/3 cup toasted pecans chopped
  • 1/2 cup quick oats

Instructions

  • In a large mixing bowl, mix butter, brown sugar, and sugar until fully blended.
  • Add eggs and vanilla extract and mix until fully blended.
  • Add ground cinnamon, baking powder, baking soda, salt, and flour. Mix until fully blended.
  • Add quick oats and mix until fully blended.
  • Fold in butterscotch chips, dark chocolate chunks, shredded coconut, and pecans. Cookie dough should be quick tough and not so pliable.
  • Form cookie dough into 12 round balls, place 6 balls onto each baking sheet lined with parchment.
  • Bake at 400F for 12 minutes. Cool for at least 10 minutes before removing onto cooling rack.

Toasted Pecans

  • Chop raw pecans into the size you prefer.
  • Place chopped pecans onto a baking sheet lined with tin foil.
  • Bake at 350 F for 7-10 minutes until lightly browned and aroma of the pecans come out. Cool for 5-10 minutes before folding into the cookie dough.
