Blueberry Banana Crumble Loaf is not your average banana loaf even though I have a good standard recipe for that too! I created this loaf because I was craving something with crumble and could only ever think of having crumble muffins but not loaves.

I created this recipe focusing on all the basic baking ingredients, which means regular flour, sugar, butter, and eggs. This is a recipe that can be baked on a regular basis because these basic ingredients will most likely be already in stock whenever you want to bake it. I love using fresh blueberries when they are in season as they make for such fresh baked goods, and would not have blue streaks/runs from the berries which happens when you use frozen blueberries. Blueberry Banana Crumble Loaf
Ingredients
- 1/2 cup butter softened
- 1 cup sugar
- 2 eggs
- 2 tsp vanilla extract
- 3 ripe bananas mashed
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 2 cups flour
- 1 cup fresh blueberries
Crumble Topping
- 1/4 cup sugar
- 1/2 cup flour
- 2 Tbsp butter melted
- 1/2 tsp ground cinnamon
Instructions
- In a large bowl, mix butter and sugar until fluffy and fully blended.
- Add one egg at a time, vanilla, and ripe bananas into the batter and mix until fully blended.
- Add all dry ingredients, mix until fully blended.
- In a separate mixing bowl, toss blueberries in 1 Tbsp of flour so they are lightly coated. Fold blueberries into the batter. This step prevents the berries from sinking to the bottom of the loaf when baking.
- Pour batter into a lightly greased loaf pan.
Crumble
- Mix all ingredients for crumble topping until coarse crumbs are formed.
- Sprinkle crumble over the loaf batter in loaf pan.
- Bake at 350 F for 50 minutes to 1 hour until inserts in the middle comes out clean.
- Cool completely before removing from pan.
The first cut into the loaf is always the most exciting. The big reveal from the centre of the loaf shows that it was baked just right! Don’t hold back using a toothpick to test the centre of the loaf to check if it’s ready. Don’t hesitate to test more than once!
