Chewy Oat Fudge Bars were inspired by Starbucks as it was my favourite treat there until they discontinued it. I am so glad my recipe turned out and I can keep indulging in these favourite treats.

Chewy Oat Fudge Bars

Chewy Oat Fudge Bars has to be one of my favourite creations! I knew I had to create this recipe when I found out that Starbucks discontinued this treat. I’d had the Starbucks treat so many times over many years to know that my bars are so close to the original treat! These bars are incredibly chewy from the oatmeal and use of condensed milk in the chocolate fudge.

Double Boiler Alternative

If you do not have a double boiler, you can place water in a medium saucepan and use a heat-proof metal mixing bowl over the sauce pan as an alternative. The base of the mixing bowl will need to touch the water in the medium saucepan in order for the ingredients in the bowl to melt down. The mixing bowl does not need to be deep in the water and needs to be tilted to let the steam from the boiling water to escape between the saucepan and the mixing bowl. A bit tricky but definitely can be done. Be sure to use a towel to handle the bowl when it gets hot.

Chewy Oat Fudge Bars

Cook Time 30 minutes
Servings 1 pan

Ingredients

  • 1/2 cup butter melted
  • 3/4 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/4 cup flour
  • 1/4 tsp ground cinnamon
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 2/3 cup oatmeal, quick rising
  • pinch of salt

Fudge

  • 1 cup semi sweet chocolate chips
  • 1 cup condensed milk
  • 2 Tbsp butter

Instructions

  • In a large mixing bowl, mix butter, sugar, egg, vanilla for 5 minutes.
  • Add dry ingredients with oatmeal going in last, mix until fully blended.
  • Spread 3/4 of the oatmeal batter into a 9×9 square pan, greased or lined with parchment paper.

Fudge

  • In a glass bowl or steel mixing bowl, add all ingredients and heat over a double boiler and mix until smooth.
  • Preheat oven to 350 F and bake the square pan of oatmeal for 5 minutes to give the oatmeal base a head start so it can be fully baked and extra chewy.
  • Pour fudge over the oatmeal base.
  • Place flattened pieces of the remaining 1/4 oatmeal batter over the fudge.
  • Bake for 20-30 minutes until the oatmeal pieces on top are just starting to brown. Do not over-bake to avoid a crunchy oatmeal texture instead of chewy.
  • Cool completely or overnight before slicing into squares.
