Mediterranean Chicken Artichoke Tray Bake

Mediterranean Chicken Artichoke Tray Bake uses boneless skinless chicken thighs, canned artichoke hearts, cherry tomatoes, zucchini, and red onion. One key ingredient that you cannot miss are the lemon slices. The lemon slices adds the citrus flavour that goes so well with the seasoning like thyme and oregano. I placed a lemon slice in each corner and one in the centre of the tray to give it a tangy punch. I love sprinkling crumbled feta cheese over it after baking. Sometimes a big dollop of humus makes it that Greek dream meal.

I love the colours in this dish and the different textures and shapes. Loving food means paying attention to the flavours, appeal, and ingredient quality. How good it smells right out of the oven should come naturally when you have prepared a tray of your favourite vegetables and meats.

Mediterranean Chicken Artichoke Zucchini Tray Bake

Ingredients

  • 500 grams chicken thighs cut into chunks
  • 3/4 cup cherry tomatoes halved
  • 1 can artichoke hearts cut into smaller pieces
  • 1/4 cup red onion sliced
  • 2 zucchinis cut into smaller pieces
  • 1/2 lemon sliced
  • 2 Tbsp olive oil
  • 1/4 tsp salt
  • 1/8 tsp ground pepper
  • 1 Tbsp your favourite dried herbs, I used thyme and oregano (1/2 Tbsp each)

Instructions

  • In a large mixing bowl, coat chicken thighs in half of the olive oil.
  • In a separate mixing bowl, toss all vegetables in the remaining olive oil.
  • In a baking sheet, place chicken thighs and vegetables evenly. Place lemon slices in each corner of the sheet.
  • Season with salt and pepper and your favourite dried herbs. I used thyme and oregano.
  • Bake at 350 F for around 30 minutes until chicken is fully cooked through. Drizzle more olive oil and salt and pepper, serve hot.

I know I absolutely need to share my stove top potatoes recipe because it goes so well with this dish. It is simple to make and does not need to be baked to get the right tenderness of the potatoes.
